The DNA-based detection of celery in food and samples from surfaces that come into contact with food or raw materials during processing has been accredited at AGORLAB LUFA. The method detects highly sensitive specific celery DNA sequences. If these are contained in the sample, it must be assumed that the protein building blocks that actually have allergenic effects are also contained. Such PCR-based methods are always used when no direct detection methods can be used.
